Fall is in the Air

Night shift is brutal sometimes.  Last night, I fell asleep at 9pm and woke up around 2am.  For the day.  Ugh.  I got up and cleaned the whole house, did 2 loads of laundry and then decided to take advantage of my time at home to do a little fall baking! 

First up was Pumpkin Chocolate Chip Bread.  I got this recipe off of Pinterest.  Super easy and smells delicious!  I haven't tasted it yet...I'm taking it into the hospital this weekend to share with my beloved co-workers.  I hope it's good!  


Then, I had a half a can of pumpkin left, so I searched Pinterest some more and found a recipe for Pumpkin Chocolate Chip Cookies!  I couldn't resist...I mixed up a batch of those, too.  YUM!  Needless to say, the house smelled DELICIOUS by the time I finished my baking this morning.  





Oh how I love the tastes and smells of fall!  :)  And the cozy, cold nights curled up under a warm blanket with a cup of hot chocolate to keep me company.  Ahhh...  ;)  Happy Fall!

Scutterbotch Pie

This is totally not on "the list" for this summer, but I've been wanting to try it for awhile, so I'm including it on the blog this week. When I was a kid, my absolute FAVORITE kind of pie was scutterbotch.  Instead of birthday cakes, I would request scutterbotch pie.  My Grandma Lane used to make it for me from time to time just because I loved it.  My Mom made it for holidays and special occasions and it was oh so good!!!  :)  Life happened and I moved away and the scutterbotch pies came less often.  I can't remember the last time I had a piece of scutterbotch pie.  About a month or so ago, I wanted to make it for some reason...can't recall why.  I didn't have the time then, but decided to give it a go today.  It wasn't TOO terribly difficult, although, I resisted the urge to call my mom in the middle of my pie-making endeavor when I read "brown the butter and brown sugar over medium-high heat" and thought to myself, "BROWN the BROWN...

Christmas 2013

Another Christmas has come and gone...why does it always go so fast?!?!?  I was grateful to be off this Christmas so I could enjoy the day with my family.  I kicked off the morning with my parents and a delicious pan of caramel french toast!  YUM!!!  Then, the rest of the family arrived and we enjoyed a feast of food before diving into all the presents that were under the tree.  The kids were lots of fun to watch as the opened all their gifts...here are a few snapshots of the chaos fun... Cooper being his usual ornery self Lily Ann and her Mama Lily Ann and Ruthie opening presents Cooper is really getting into this present thing! Lily got a barbie! Luke was so funny...he opened one gift and then played with it for 30 minutes before returning to open another... I think he was saying, "Oh WOW!" in response to a toy that made noises...and then he would grab his cheeks in disbelief!  :)  It was hilarious! Cooper like...

Sophie

School and work finally caught up with me...I have neglected to update the blog for almost a month because I've been busy studying all about politics and nursing!  (Who knew the government could be so interesting?!?)  Not to mention working 4 evenings a week and trying to squeeze in time for the family in between!  Makes for a pretty hectic schedule!  So why not add one more thing, right?!? Introducing... SOPHIE!!!!! My little baby goldendoodle has arrived!  She will be 9 weeks old tomorrow and she is one cute little ball of puppy fur!!  :)  She has a sweet personality and loves to chew on ANYTHING that's lying around (i.e. my shoes, the rugs, the legs of the table, my hands, blue jeans).  We're gonna have to work on what's appropriate to chew and what needs to be left alone.  She hasn't grasped the concept of potty training at all yet, but hopefully soon?!  We've made lots of trips outside in the rain already...and I'm so glad ...
